with Caramelized Onions & Arugula

INGREDIENTS
- 1 yellow onion, peeled and thinly sliced
- 4 slices of sourdough bread
- 2 oz Treeline® Dairy-Free Herb Garlic Cheese
- 2 oz baby arugula
- 2 tbsp apricot preserves
- 1 tbsp olive oil*

INSTRUCTIONS
Preheat oven to 450°F. Heat 1 tbsp olive oil in medium nonstick skillet over medium-high heat. Add onion and cook, stirring occasionally, until softened and lightly browned, 8 to 10 minutes. (TIP: You can let the onion cook longer for more caramelization (a process that helps develop the onion’s color and flavor).)
Toast sourdough directly on oven rack until lightly browned, 2 to 4 minutes.
Place 2 toast slices on clean work surface. Spread half the herb garlic cheese on each slice and top with some caramelized onion and arugula. Spread apricot preserves on remaining 2 toast slices and close sandwiches. Cut in half and transfer to 2 serving plates.
